Ingredients 4 4-ounce catfish fillets vegetable oil or cooking spray 1/4 cup Cornmeal 1/2 tsp. Paprika 1 tsp. Dried thyme 1 tsp. Dried basil 1/2 tsp. Garlic powder 4 tsp. Blackening seasoning
Directions Preheat the oven to 400 degrees. Mix the cornmeal, thyme, paprika, garlic powder and basil in a bowl. Sprinkle 1 teaspoon of the blackening seasoning on each of the catfish fillets. Coat the fillets thoroughly with the cornmeal mixture and put them on an oiled baking sheet. Bake for 20 minutes. Reduce the heat to 350 degrees and bake for about 5 minutes more, until the crust is golden and the fish flakes easily. Garnish, if you wish, with sprigs of parsley, lemon wedges, pitted black olives, veggies or fruit.
