Easy Catfish in Apricot Sauce

Ingredients 2 lb. Catfish fillets, cut to portion size 1/2 cup melted Butter Paprika for color 1/4 cup White Wine 1 lemon cut in wedges Apricot Butter Sauce 1 cup Heavy cream 1 can pitted Apricots 12 pecan halves (optional)

Directions First prepare the Apricot Sauce. Drain the apricots and puree them with cream. Then, put the mix in a pot, add pecan halves and slowly simmer cream and pureed apricots until thickened. The Catfish Season the catfish with salt and paprika and place in baking dish with melted butter and wine. Bake uncovered in a 450'F. oven 5 to 7 minutes or until catfish is flakes easily (do not overcook). Top with Apricot Cream Sauce and serve.
