Ingredients 1 lb. finely chopped catfish fillets 1/2 cup oil 1 tbsp. chopped bell pepper 4 tbsp. chopped green onion 1 egg--beaten 2 tbsp. mayonnaise 6 tbsp. dry bread crumbs 1/4 tsp. ground black pepper 1 tsp. salt
Directions Saute bell pepper and green onion in 2 tbsp. oil until soft. Oil a baking pan. Cut catfish into bite size pieces. Bake catfish in 375F oven till flaky--about 20 minutes. Mix sautéd pepper and onion, catfish, and rest of ingredients. Chill for at least 20 minutes. Form small patties for appetizers or large for entree. Heat rest of oil on medium heat. Saute patties until golden brown on each side. Serve with Dijon sauce. Serves 4 for entree or 8 for appetizers Dijon Mustard Sauce 1/2 cup plain yogurt 3 tbsp. Dijon Mustard 1/3 cup mayonnaise 1 tbsp. chopped onion 3 tbsp. red wine Mix all ingredients and warm. Yields 1 1/4 cups.
