Ingredients Newman's Award Winning Beer Batter Fried Catfish 1/2 cup flour 1/2 cup cornstarch 2 tablespoons Cajun seasoning 1 tbsp. garlic powder 1 tsp. baking powder 1 tsp. paprika 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. red pepper 1/2 tsp. dried oregano leaves, crushed 3/4 cup room-temperature beer 1 large egg, lightly beaten Vegetable oil 2 lbs. catfish fillets
Directions Combine the flour, cornstarch, Cajun seasoning, garlic powder, baking powder, paprika, white and red peppers and oregano. Whisk in beer and egg until smooth. Then cover and refrigerate for 1 to 2 hours. Pour vegetable oil 3 inches deep in a large pan and heat to 375°F. Cut catfish into strips 3-4 inches wide. Stir batter and fold in catfish. Lift fish strips with tongs, draining excess batter and place catfish in oil several pieces at a time (do not over crowd). Fry until well browned on all sides, about 3 minutes. When done, put on a paper towels to drain. Keep warm, repeat with remaining catfish.
