Ingredients


Sauteed Catfish with Ginger Peach Sauce 

4 catfish fillets (4-6 oz. each) 
2 tbsp. olive oill 
1 tbsp. margarine or butter 
1/2 cup coarsely chopped pecans 
Ginger peach Sauce (recipe follows) 
Salt and Pepper


Rinse fish and pat dry.  Heat oil & butter: in a large frying pan, add pecans and cook for 1 to 2 minutes.  Remove nuts to paper towels to drain. Saute fish in the pan until it is crisp and golden on bottom, about four minutes. Turn fillets over and cook for 4 minutes more. Arrange fillets on plates. Add pecans to Ginger Peach sauce and spoon over the fillets.  

Ginger Peach Sauce:

1 can peach halves
I 1/2 tsp. powdered ginger
I package dried peaches (or apricots) 
4 oz..heavy cream

Drain 1 can peaches.  Place peaches in blender.  Add dried peaches, heavy cream and 1tsp. ginger powder and blend on high adding dried peaches until you get the desired smoothness.  Heat and pour over fillets..
